Fudco Achar Masala in the 800g bag is the same ready pickle masala as the smaller pack, sized for the cook who puts up a whole season of mango or lime pickle at once. Dried red chilli and fenugreek lead the blend, with mustard seed, dried mango powder, asafoetida, salt and sesame oil, so the spicing and salt are already worked out. How to use it
Cut washed and fully dried raw mango, lime, gunda, carrot or chillies into pieces and coat them generously with the masala. Pack tightly into clean, dry jars and top with warmed mustard or sesame oil so the pieces stay covered. Stir or shake the jars daily and give the pickle a few days to mature. Keep a small tub of the dry masala aside for sprinkling over dal, raita or rice.
