Fudco Achar Masala is a ready mixed pickle masala, the coarse red spice mix that turns raw mango, lime, carrot or chillies into a Gujarati or Punjabi style achar. Dried red chilli and fenugreek lead it, with mustard seed, dried mango powder, asafoetida, salt and a little sesame oil. Because the salt and spices are already balanced, a homemade pickle needs only the cut vegetables, oil and a few days in the sun or a warm kitchen. How to use it
Wash and dry raw mango, lime, carrot or green chillies well and cut them into small pieces, as any water spoils a pickle. Toss with enough masala to coat every piece, pack into a clean, dry glass jar and pour over warm mustard or sesame oil to cover. Shake the jar daily and leave for a few days before eating. A spoonful also lifts plain dal, curd rice, a sandwich or a bowl of khichdi.
