Enrich Jaffna Red Country Rice is atta kari, the red country rice of the Jaffna peninsula: short, reddish brown grains with the bran left on, which cook to a nutty, earthy rice with a firm bite. In northern Tamil homes it is the rice under a fish kulambu, a crab curry or a plain dal and greens, and it holds its shape well beside a wet curry. Sold here in a 1kg bag. How to cook it
Wash the rice two or three times in fresh water. Put 1 cup of rice in a saucepan or rice cooker with 2 to 2½ cups of water and bring to the boil, then turn the heat down to its lowest setting and simmer for 20 to 25 minutes. Take the pan off the heat and leave it covered to steam for another 12 minutes before serving.
