Diamond Foods Vannamei Prawns 21/25 HLSO are whiteleg prawns, Litopenaeus vannamei, with the heads removed and the shells left on. HLSO stands for headless, shell on, the cut chefs choose when they want the flavour and juiciness that the shell protects during cooking without the work of removing heads. At 21 to 25 prawns to the pound they are a good medium large size, farm raised in India and frozen in a generous 700g pack. Find more in our Frozen Prawns & Seafood range.
How to use it
The pack says to defrost thoroughly and cook fully before eating. Thaw in the fridge, then peel and devein or leave the shells on for grilling and barbecues. Toss in garlic, chilli and lime and grill until pink, or peel and add to a prawn masala, a coconut curry, fried rice or noodles in the last few minutes of cooking so they stay tender. Do not refreeze once thawed.
