Diamond Foods Squid Rings (Todarodes) are Japanese flying squid, Todarodes pacificus, sea caught in the North West Pacific and cut into wide rings before freezing. These are larger, thicker rings than the Loligo pack, with a meaty bite that suits battered calamari and slow cooked squid curries. The bag holds 240g of squid. How to use it
Thaw in the fridge, drain and pat dry, then cook through until piping hot. Coat in a light batter or seasoned flour and fry quickly for crisp calamari, or simmer the rings slowly in a tomato and coconut curry until tender. Squid turns rubbery between those two, so cook it either very fast or long and gentle.
