Diamond Foods Squid Rings (Loligo) are Indian squid, Loligo duvaucelii, cleaned and cut into rings with some tentacle pieces, then frozen in India. With all the cleaning and slicing done, they go straight into the pan for calamari, a devilled squid stir fry or a squid curry. The 320g bag is a handy size for two to three people. How to use it
The pack says to defrost thoroughly and cook fully prior to consumption. Thaw in the fridge, drain and pat dry. For crisp calamari, dust in seasoned flour or a spiced batter and fry in hot oil for 1 to 2 minutes. For a Sri Lankan devilled squid, stir fry over a high heat with onion, peppers, chilli flakes and tomato sauce. Squid toughens if overcooked, so keep it quick.
