Diamond Foods Red Onion is small red onions, peeled and individually quick frozen in India, the little onions South Indian and Sri Lankan cooks use whole in sambar, kuzhambu and kara kulambu. Peeling a pile of small onions is one of the slowest jobs in the kitchen, so a 400g box in the freezer saves real time. The box holds nothing but red onion. How to use it
Add the onions straight from the freezer to a hot tempering of mustard seeds and curry leaves and fry until they soften and colour, then build a sambar, vengaya kuzhambu or onion theeyal on top. They can also be sliced once slightly thawed and used in any curry base. Do not refreeze once thawed.
