Diamond Foods Otti is streaked spinefoot, Siganus javus, a rabbitfish known as otti in Sri Lankan Tamil. The fish are frozen whole, with firm white flesh and a full, slightly sweet flavour that suits a thick, spicy curry. It is caught in the Indian Ocean and packed in a 560g bag. How to use it
Thaw in the fridge, then scale, gut and rinse the fish and cut into pieces. Simmer in a tamarind and roasted curry powder gravy for a Jaffna style meen kulambu, or score the whole fish, rub with chilli, turmeric and salt and shallow fry until crisp. Cook through until piping hot.
