Diamond Foods Oora is white spotted rabbitfish, Siganus canaliculatus, cut into pieces and frozen. Oora is the Sri Lankan Tamil name for this reef fish, which has firm, white flesh and a rich, distinctive flavour that stands up well to strong spices. How to use it
Thaw in the fridge, rinse and pat dry, then cook through until piping hot. Oora is a favourite for a Jaffna style fish curry with roasted curry powder, tamarind and coconut milk, and it fries well after a rub of chilli, turmeric and salt. Serve with rice, string hoppers or pittu.
