Diamond Foods Mural is black barred halfbeak, Hemiramphus far, cut into pieces and frozen. Mural is the Tamil name for this slim, silver fish with its long lower jaw, a lean, mild fish that Sri Lankan and South Indian families fry and add to curries. How to use it
Thaw in the fridge, rinse and pat dry, then cook through until piping hot. Rub the pieces with chilli powder, turmeric, salt and a little lime and shallow fry until golden, or simmer them in a tamarind and coconut curry. Mural also makes a good ambul thiyal style dry curry with goraka and black pepper.
