Diamond Foods Milk Fish is whole milkfish, Chanos chanos, farm raised and frozen. Called paal meen in Tamil, it has a mild, clean flavour and soft white flesh that soaks up spices, and it is a favourite in Sri Lankan, South Indian and Filipino cooking. How to use it
Thaw in the fridge, then scale, gut and rinse the fish and cut it into thick slices. Milkfish has many fine bones, so cook it in a way that lets the flesh lift away easily: a slow tamarind and chilli curry, a fried fish with a thick masala crust, or a sour soup. Cook through until piping hot.
