Diamond Foods King Fish is narrow barred Spanish mackerel, Scomberomorus commerson, cut into steaks and frozen. Known as seer fish, vanjaram, surmai or arakkula, it is one of the most loved fish in South Indian and Sri Lankan cooking, with firm, meaty white flesh and very few bones. How to use it
Thaw the steaks in the fridge, rinse and pat dry, then cook through until piping hot. For vanjaram fry, marinate in chilli powder, turmeric, ginger garlic paste, lemon and salt for 20 minutes and shallow fry until golden. King fish also holds together well in a coconut curry or a Goan style recheado masala.
