Diamond Foods Grated Coconut is fresh coconut, finely grated and frozen, the everyday staple of Kerala, Tamil and Sri Lankan cooking without the work of breaking and scraping a nut. Keep the 400g bag in the freezer and take out a handful whenever a recipe calls for fresh coconut. How to use it
The pack says that for best results you should cook it frozen, so add it straight to the pan. Toss through a cabbage or bean thoran at the end of cooking, layer it with rice flour for puttu, or mix with chilli flakes, onion, lime and salt for pol sambol. For chutney or curry paste, let it soften for a few minutes, then grind. Refrigerate any thawed leftovers at once.
