Diamond Foods Clean Squid is Indian squid, Loligo duvaucelii, sold already cleaned, so the tubes and tentacles go straight from the freezer to the chopping board with no gutting or peeling. The bag holds 750g of squid, frozen at sea catch quality and packed in India. Slice the tubes into rings for a pepper fry or a Sri Lankan dry curry, or score and grill them whole. How to use it
The pack says to defrost thoroughly and cook fully prior to consumption. Thaw the bag in the fridge, rinse the squid and pat it dry, then cut the tubes into rings or strips. Cook squid either very quickly over a high heat, a couple of minutes in a hot pan, or slowly in a curry sauce until tender, as anything in between turns it chewy. Marinate in chilli powder, turmeric and lime for a quick devilled squid.
