Diamond Foods Cassava is peeled cassava root, also called tapioca, maravalli kizhangu or kappa, cut into large chunks and frozen so it is ready to boil without the work of peeling the tough skin. Cassava has a starchy, mildly sweet flesh that turns soft and fluffy when cooked, and it is a staple in Kerala, Sri Lanka and Africa. The 908g bag makes several family meals. How to use it
Put the tapioca in water and boil it for a few minutes until tender, then pour out the water and add salt and spices to taste, as the pack suggests. Mash it with a tempering of mustard seeds, shallots, chilli and curry leaves for Kerala kappa puzhukku, serve it with fish curry or katta sambol, or fry boiled pieces into crisp cassava chips. Do not refreeze after thawing.
