Diamond Foods Blue Swimming Cut Crab is blue swimmer crab, Portunus pelagicus, caught in the Indian Ocean and cleaned, cut and frozen in Sri Lanka. The 800g box of cut pieces is ready for the rich, peppery crab curries of Jaffna, Chettinad and the Kerala coast, with sweet, tender meat in the shell. How to use it
Defrost the crab thoroughly, as the pack advises, then rinse the pieces and crack the claws lightly so the gravy can reach the meat. Simmer them in a spiced onion, tomato and coconut milk gravy with curry leaves, black pepper and roasted curry powder for a Jaffna or Chettinad crab curry, or stir fry with garlic, chilli and pepper. Cook fully before eating. Do not refreeze after thawing.
