Bitter gourd has a distinctive sharp, bitter flavour that is prized across Indian, Sri Lankan and Bangladeshi cooking, balanced with tamarind, jaggery, onion and spice. How to use it
Let the pieces thaw and squeeze out a little water, then toss them with chilli powder, turmeric and salt and fry until crisp for pavakkai fry, or stir fry with onions and spices for karela sabzi. They also suit Tamil pavakkai pitlai, Kerala theeyal and Bengali shukto. Do not refreeze after thawing.
