Ching's Secret Veg Manchurian Masala Mix makes the dark, garlicky gravy for veg Manchurian, the cabbage ball dish that sits at the heart of Desi Chinese cooking. Corn flour thickens the sauce as it simmers, while dehydrated garlic, onion, soy sauce powder, ginger, cumin and chilli give it the familiar savoury depth. How to use it
The pack recipe serves four. Squeeze the water from 1½ cups of grated cabbage, mix it with chopped ginger, green chilli, 2 tbsp besan and salt, roll into small balls and deep fry on a low flame until golden. Mix 2½ tsp (17g) of the masala into 1½ cups (250ml) of water. Stir fry a cup of diced onion, capsicum and carrot in 1½ tbsp oil for 2 to 3 minutes, add the balls and the masala mixture and simmer for 2 to 3 minutes, longer for a thicker gravy. Garnish with spring onion.
