Ching's Secret Schezwan Stir Fry Cooking Sauce is a thick, brick red sauce of chilli, garlic, tomato and sesame, sweet and hot in the way Desi Chinese Schezwan dishes are meant to be. A few spoons season a wok of rice, chicken or vegetables, and the jar works as a dip as well as a cooking sauce. Cinnamon, cumin, clove and ginger give it a warmth beyond plain chilli. How to use it
For Schezwan chicken for two, fry two boneless chicken breasts cut into pieces in hot oil until cooked, add half a cup of capsicum cubes and toss for a minute, then stir in ¼ cup of the sauce, ¼ cup tomato ketchup, salt and half a cup of water and simmer for 5 minutes. For Schezwan rice, stir fry spring onion and boiled vegetables, add 1½ cups of cooked rice, 2 tbsp of the sauce and a teaspoon of soy sauce and toss gently. It also works with babycorn, mushrooms and pak choi.
