Ching's Secret Egg Hakka Noodles are thin wheat noodles made with egg powder and a touch of turmeric for colour, the kind used for hakka chowmein, the best loved dish of Desi Chinese cooking. They boil in two to three minutes and keep a springy bite through a hot, fast stir fry with vegetables, scrambled egg, chicken or seafood. One 150g pack makes a generous plate. How to use it
Bring about 10 cups of water to a rolling boil in a large pan, add the noodles and boil for only 2 to 3 minutes so they stay al dente. Drain, rinse under running water, spread them on a flat surface and toss in a teaspoon of oil to stop them sticking. For chicken hakka chow, stir fry shredded boiled chicken with carrot, mushroom, capsicum and onion in hot oil, add the noodles with chowmein masala and a splash of water, and toss for 3 to 4 minutes. Add Schezwan chutney for a spicier plate.
