Ching's Secret Chicken 65 Masala is a ready blend for Chicken 65, the fiery, deep fried chicken bites served as a starter across South India and on Indo-Chinese menus. Corn flour and wheat flour give the coating its crunch, while chilli, coriander, cumin, ginger, fennel, clove, cinnamon and star anise bring the heat and fragrance. How to use it
The pack recipe serves two. Mix 400g of boneless chicken pieces with 3 tbsp ginger garlic paste, 1 egg, 8 to 10 curry leaves and 2½ tsp (20g) of the masala, and leave for 10 minutes. Deep fry in hot oil until golden brown and crisp, then serve hot with sliced onion and lemon. The same coating works on paneer, cauliflower or prawns for a vegetarian or seafood version.
