Cooking for an almsgiving, a wedding lunch or a full house at the weekend calls for the 10kg bag of Araliya keeri samba. The grains are tiny and close to round, and when steamed they turn light and aromatic, each one separate. Many Sri Lankan families also eat it as their everyday white rice for that reason. How to cook it
Measure a little less water than for long grain rice, about one and three quarter cups to each cup of rice. Bring to the boil, cover, lower the heat and leave undisturbed until the steam holes appear. For large batches, cook in a wide pan so the rice sits no deeper than a few inches.

Store in a cool and dry place away from direct sunlight. Keep in an airtight container once opened.
