AMK Fried Katta is a Sri Lankan jar of dried katta, or queen fish, fried crisp in oil with sliced onion, chilli and spices, in the chilli spicy original recipe. Known as katta karawala badum in Sinhala and katta karuvaadu in Tamil, it is the salty, fiery side dish that turns a plate of rice and dhal or a bowl of kiribath into a full meal. The jar is made by AMK in Homagama, a Sri Lankan food maker since 1989, and packs a quarter of its weight in fish. How to use it
The fish is already cooked and ready to eat, so spoon a little straight from the jar beside rice and curry, string hoppers, pittu, roti or milk rice. A serving on the label is 20g, and the jar holds about 10. It is strongly salted and hot, so a small amount goes a long way; try it folded through plain rice with a squeeze of lime, tucked into a roti with sambol, or warmed briefly in a dry pan to crisp the onions again. Use a clean, dry spoon and keep the jar in the fridge once opened.
