AMK is a Sri Lankan style dried fish label, and its product on our shelves is fried katta with chilli. Katta is the Sinhala and Tamil name for a dried, salted fish much loved on the island, and here it has been fried until crisp and seasoned with chilli, so it needs no soaking, no frying and no washing of smoky pans at home.
It sits in our dried fish and prawns collection, part of the fish category in our tins and ready meals department. Near it you will find uncooked dried fish for making your own curries and sambols, Maldive fish and tinned fish.
In Sri Lankan homes fried dried fish is the crunchy, salty element on a plate of rice and curry, eaten in small pieces between mouthfuls of dhal, greens and coconut sambol. It is especially good with kiribath, milk rice, on Sinhala and Tamil New Year mornings, and with plain rice and a spoonful of curd. Many cooks also break it up and toss it with fried onion, tomato and curry leaves to make a quick katta sambol, or fold it into fried rice. Because it is ready to eat, it is a convenient way to bring a taste of home to a packed lunch.
Once opened, keep the pack tightly sealed or tip the fish into an airtight jar, as it absorbs moisture and loses its crunch; in warm weather store it in the fridge. A few minutes in a dry pan will crisp it up again if needed. To compare AMK with other dried fish, browse the full dried fish and prawns range or our katta sambol.
