Aachi Tamarind Rice Powder is a ready spice mix for puliyodharai, the tangy tamarind rice of Tamil temple kitchens, festivals and train journey lunch boxes. Tamarind gives the sourness, a little jaggery softens it, and roasted gram dhal, urad dhal, peanuts, white sesame, coriander, chilli, fenugreek, pepper and asafoetida bring the nutty, spicy depth. How to use it
Following the pack, heat 2 tbsp of groundnut oil in a pan, splutter 1 tsp of mustard seeds and add 1 to 2 dry red chillies and a few curry leaves. Add 1 tbsp of Aachi Tamarind Rice Powder and mix it with 200g of cooked rice. Leave it aside for 15 minutes so the rice soaks up the flavour, then serve. The pack says this serves 2 to 3. Rice cooked a little firm and cooled before mixing keeps its grains separate, and a handful of fried peanuts or cashews adds crunch. Serve with appalam, vadam or curd.
