Ahuja Foods is a flour label we carry for its chakki fresh atta, the whole wheat flour that North Indian and Pakistani families use for flatbread every day. Chakki atta is milled between grinding stones or stone-style mills, which warms the grain slightly and gives the flour its faintly toasted smell and its ability to hold water.
Ahuja Foods sits in our chapati atta collection, part of wheat flour in the atta and flour department. We keep it in the large family sack, the size bought by households that cook two or three meals of roti a day.
Chakki atta is kneaded with water and a pinch of salt into soft dough for phulkas puffed over a gas flame, tawa chapatis brushed with ghee, and layered lachha parathas. Stuffed parathas with potato, radish or paneer need a slightly firmer dough, and puris need a stiffer one with a little oil rubbed in. Many Punjabi homes also use it for missi roti mixed with besan, and for meethi roti sweetened with jaggery.
A large sack lasts weeks, so decant a few days of flour into a lidded tin by the worktop and keep the sack sealed in a cool, dry cupboard. Whole wheat flour can attract weevils in warm weather, so check it now and then and keep it away from damp. To compare, browse our multigrain atta and the Pillsbury shelf.
