Uzhavan means farmer in Tamil, and the bottle carries a ploughman and his bullocks to match. This is a cold pressed gingelly oil, nallennai, made from 97 per cent sesame seed pressed with raw palm jaggery in the traditional way. It pours a clear gold with the fresh, mild sesame smell of village pressed oil.
How to use it
Use it for the tarka on kuzhambu, sambar and rasam, to fry vadai and appalam at a moderate heat, and to pour over idli podi or hot rice with a pinch of salt. It is the oil to seal a jar of mango or lime pickle, and many Tamil households use it for the Saturday oil bath. Keep the heat moderate, because a cold pressed oil smokes sooner than a refined one.
