Naga Refined Wheat Flour is maida, the finely milled white wheat flour that Indian kitchens use for soft, stretchy doughs and crisp fried snacks. Naga has been milling since 1977, and the front of this pack shows flaky, layered parotta, the dish this flour is best known for in South Indian homes and Sri Lankan kotthu shops. The 10kg sack suits large families, caterers and anyone who makes parotta, naan or samosas every week. More bags and sizes are in our Maida range.
How to use it
For parotta, knead maida with a pinch of salt and sugar, a little oil and water into a very soft dough, rest it well, then stretch thin, coil and roll out before cooking on a hot tawa and crushing the layers by hand. Maida also makes soft naan and kulcha with yoghurt, puffed bhatura to serve with chole, and the thin, crisp pastry for samosas and spring roll sheets. Bakers use it as plain flour for cakes, biscuits, nankhatai and sweets such as balushahi and shakarpara.
