Mr King Sardine H/L Clean is oil sardine, Sardinella longiceps, caught by gillnet in the Indian Ocean off Sri Lanka, then headed and cleaned before freezing. How to use it
The pack says to cook before eating and not to refreeze after thawing. Thaw in the fridge, rinse and score the fish, then coat in chilli, turmeric and salt and fry until crisp for mathi fry. Sardines are also excellent in a red Kerala fish curry with kodampuli, or a Sri Lankan sardine curry with goraka and coconut milk.
