Mr King Half Cut Blue Swimming Crab is Portunus pelagicus from Sri Lanka, cleaned and halved before freezing so it is ready for the pot. Blue swimming crab has sweet, delicate meat, and jumbo sized pieces give plenty to enjoy in a rich curry. How to use it
Thaw in the fridge and rinse well. Fry onions, curry leaves, garlic and ginger, add roasted curry powder or Chettinad masala and tomatoes, then add the crab and coconut milk and simmer until the shells turn orange and the meat is cooked through. Finish with a squeeze of lime and serve with rice, string hoppers or bread for mopping up the gravy.
