Mr King Emperor is emperor red snapper, Lutjanus sebae, known as vilai meen in Tamil, caught at sea off India and cut into steaks before freezing. It has white, tender flesh with a mild sweetness that takes on spices well, a favourite for both fish fry and curry. The pack carries a 600g gross weight. How to use it
The pack says to cook before eating and not to refreeze after thawing. Thaw in the fridge, rinse, then rub with chilli powder, turmeric, salt and lemon and shallow fry, or simmer the steaks in a tomato, tamarind and coconut curry. They also bake well wrapped in banana leaf or foil with green masala.
