Mr King Anchovies are small silver fish, caught at sea off India, then headed, cleaned and frozen so they are ready to cook straight from the pack. Known as nethili in Tamil and Malayalam homes, they have a rich, savoury flavour and soft bones that become pleasantly crisp when fried. This family pack carries a 600g gross weight. How to use it
The pack says to cook before eating and not to refreeze after thawing. Thaw in the fridge, rinse and pat dry, then coat in chilli powder, turmeric, salt and a little rice flour and shallow fry until crisp for nethili fry. They also simmer well in a tamarind and coconut fish curry, or can be fried with onions for a quick South Indian or Sri Lankan side dish.
