Gits Nylon Khaman Snack Mix is a short blend of chickpea flour, sugar, salt, raising agents and turmeric for nylon khaman, the bright yellow, very soft and spongy besan cake of Gujarat. Khaman is often sold as dhokla outside Gujarat, and the nylon style is the lightest of all, with an open, airy crumb that soaks up a mustard seed and chilli tempering. How to use it
Blend the contents of the pack well with 640ml of water and pour equal amounts into 5 greased steaming trays. Steam on a high flame for 15 minutes; with a pressure cooker, leave off the weight. Open the lid straight after steaming, take out the trays after 4 to 5 minutes and cool for 10 minutes. Sprinkle 30ml of water over each tray and cut into pieces. Heat 125ml of oil with 2.5 teaspoons of mustard seeds, add green chilli pieces once they crackle, then 150ml of water, boil and spread over both trays. Finish with coriander and fresh grated coconut.
