Gits Gulab Jamun Dessert Mix in the 500g box is the same wheat flour and skimmed milk powder dough as the smaller pack, sized for a festival tray or a wedding order at home. Milk powder makes up 35% of the mix, which keeps the fried dumplings soft and spongy once they have drunk in the syrup. How to use it
Prepare the syrup by dissolving 1500g of sugar in 1600ml of water, then boil and simmer for 5 minutes; a few strands of saffron and some cardamom add colour and scent. Add 250 to 300ml of water to the mix in parts and knead gently to a soft, smooth dough, using milk for a richer jamun. With ghee or oil on your palms, shape 100 smooth balls with no cracks. Deep fry in ghee or oil on a medium to low heat until golden brown, drain and soak in the hot syrup for 30 minutes before serving warm or cold.
