Gits Dosa Breakfast Mix is a dry blend of rice flour, lentil flour and a little semolina and corn flour with fenugreek, made to give the crisp, golden South Indian pancake without soaking, grinding and an overnight ferment. Mixed with water it turns straight into a pouring batter, and one 500g box makes around 20 dosas, enough for a family breakfast or a weekend brunch with sambar and chutney. How to use it
Whisk the contents of the pack into 800ml of water to a smooth batter. Lightly grease a hot, flat non-stick pan or tawa, pour 75ml of batter into the centre and spread it outwards in a circular motion to a thin dosa about 8 inches across. Sprinkle a few drops of oil over the top and cook until golden brown, then fold and lift off. Wipe the hot pan with a wet cloth once before the next dosa. For masala dosa, add a potato and onion filling before folding, and serve hot with sambar and coconut chutney.
