Funky Soul Spices Thyme is dried thyme in a 16g square glass jar with a flip top shaker lid. The tiny grey green leaves have a warm, earthy, slightly lemony flavour that holds up well in slow cooking. How to use it
Rub a teaspoon over chicken or lamb with salt, garlic and oil before roasting, or add it to a pot of stew, jollof rice, curry goat or soup at the start so it has time to soften. Mix it with breadcrumbs for stuffing or scatter it over roast potatoes and carrots. Dried thyme is stronger than fresh, so start with a little.
