Fudco Whole Mild Kashmiri Chilli in the 200g bag is the same stemless Kashmiri chilli from India in a size for regular paste making. The pods are long and crinkled, a dark brick red, with a gentle heat and a slightly sweet, smoky taste. They turn a curry red without making it fiery, the reason they are used in Kashmiri, Punjabi and Goan cooking. Find more whole chillies in our Whole Dried Chillies range.
How to use it
Soak a handful in just boiled water until soft, then blend with vinegar, garlic and cumin for a vindaloo or recheado masala, or with yoghurt and ginger for a tandoori marinade. Drop two or three into the oil for a tadka over dal, chole or rasam. Dry roasting a batch and grinding it gives a fresh Kashmiri chilli powder that keeps for weeks in a sealed jar.
