Fudco White Till Seeds are white sesame seeds, called til in Hindi and ellu in Tamil, in a 1kg bag for kitchens that use them by the handful. The seeds are small, flat and creamy white, with a mild nutty flavour that deepens to a toasted, almost buttery note once they hit a dry pan. How to use it
Dry roast the seeds in a heavy pan over a low heat, stirring all the time, until they turn golden and start to pop, then tip them out so they stop cooking. Bind them with melted jaggery for til ladoo, gajak or chikki, or add a spoonful to the tadka for dhokla, khandvi and Gujarati dal. They go on naan and bread before baking, into chutney powders and podis, and over noodles and stir fries at the end.
