Fudco Tandoori Masala is a ground mix of coriander, mustard, fenugreek, ginger, cumin, black pepper, cayenne, cassia, cardamom and clove, with garlic, onion, salt and paprika for the red colour that tandoori chicken is known for. It is milled and packed in the UK. Mixed with yoghurt it becomes a marinade that chars well under a hot grill. Find more in our Tandoori & Tikka Masala range.
How to use it
Stir two to three tablespoons into a cup of thick yoghurt with lemon juice and ginger garlic paste. Score chicken legs or cut boneless pieces, coat them well and leave them in the fridge for a few hours or overnight. Roast in a very hot oven, grill or barbecue until charred at the edges. The same marinade works for paneer, fish, lamb chops, cauliflower and potatoes. The mix already contains salt, so taste before adding more.
