Fudco Special Tea Masala is the ground spice for masala chai, labelled in Gujarati as cha no masalo. Ginger comes first, then cardamom, cinnamon, cloves, black pepper, nutmeg and white pepper, so a pinch gives the tea a warm, peppery bite with a sweet cardamom scent. How to use it
For two cups, bring a cup of water to the boil with two teaspoons of loose black tea and a quarter teaspoon of tea masala. Add a cup of milk and sugar to taste, bring it back to the boil and let it rise two or three times, then strain into cups. Use more masala in winter for a stronger chai. A pinch also works in rice pudding, biscuit dough or a spiced hot milk at bedtime.
