Fudco Rajapuri Haldi Powder is ground turmeric made from the Rajapuri variety, the bright golden haldi that goes into almost every everyday Indian dal and sabzi. It gives food its yellow colour and a warm, earthy, slightly bitter taste, and a little goes a long way. The 300g pack suits a kitchen that cooks with haldi every day. How to use it
Add a quarter to half a teaspoon to hot oil or ghee with the onions, after the cumin or mustard seeds have crackled, and stir for a few seconds before the tomatoes or vegetables go in so the raw taste cooks out. Stir it into toor dal as it boils, rub it with salt over fish before frying, and use it in lime and mango pickles. The pack says to cook it before eating. Turmeric stains hands, wooden spoons and worktops, so wipe spills quickly.
