Fudco Nigella Seeds are kalonji, the small, matt black, teardrop shaped seeds with a sharp, peppery taste and a hint of onion when they hit hot oil. They are pressed onto naan and kulcha before baking, stirred into lime and mango pickles, and they make up one of the five spices in Bengali panch phoron. Kalonji is sometimes sold as onion seed or black cumin, though it comes from a different plant to both. Find more whole seeds in our Kalonji (Nigella) range.
How to use it
Fry half a teaspoon in hot oil or ghee for a few seconds until it crackles, then add onions for a dal, a potato sabzi or a fish curry. Sprinkle the seeds over naan, paratha or bread dough before baking, or mix a pinch into samosa pastry and mathri. They combine with fennel, cumin, mustard and fenugreek seeds in equal parts for panch phoron. Toast them briefly in a dry pan before sprinkling over salads.
