Fudco Moth Whole is whole moth beans, the small, brown, oblong pulse known in Maharashtra as matki. They have a firm bite and an earthy, slightly nutty taste, and they sprout readily, which is how they go into misal pav and matki usal. In Rajasthan and Gujarat the same beans are cooked whole as a dry sabzi or a thin curry. The pack shows 16.1g of fibre and 17.5g of protein per 100g. Find more whole pulses in our Rajma & Dried Beans range.

      How to use it

To sprout, soak the beans overnight, drain, then keep them covered in a cloth or a closed container for a day or two until short tails appear. Cook the sprouts with onion, tomato, goda or garam masala and coconut for matki usal, or use them as the base of a misal. Unsprouted beans can be soaked for six hours and pressure cooked until tender for a simple curry. Pick over the beans before soaking.
