Fudco Javentri is whole mace, the lacy orange red covering that wraps a nutmeg seed, dried into thin, brittle blades. It tastes like a softer, more floral nutmeg with a hint of pepper, and it is one of the spices that gives Mughlai biryani, korma and nihari their perfume. A small 30g pack is plenty, because a single blade flavours a whole pot. Find nutmeg and mace together in our Mace & Nutmeg range.
How to use it
Drop one or two blades into hot ghee with bay leaf, green cardamom and cinnamon at the start of a biryani, pulao or korma, then lift them out before serving if you prefer. Grind a little with cardamom and black pepper for a fragrant garam masala, or warm a blade in milk for kheer and sweet sauces. Store the blades whole and grind only what you need.
