Fudco Cinnamon Powder is ground cinnamon bark, a warm brown powder with the sweet, woody smell that goes into cakes, chai and spice blends. Ground cinnamon spreads its flavour through a dish quickly, so it suits recipes where whole bark would be fished out, such as batters, doughs and rubs. The pack is processed and packed in the UK. How to use it
Stir a pinch into masala chai, hot milk or porridge, or beat a teaspoon into cake, cookie and cinnamon bun dough. Mix it with cumin, coriander and chilli for a lamb or chicken rub, or add a little to keema and Moroccan style tagines. It also goes into homemade garam masala when you have no whole bark to grind. The pack says to cook before eating, so bake or simmer it in, and keep the opened pack in an airtight jar away from sunlight.
