Fudco Cinnamon Cassia Bark is thick, rough curled bark from the cassia tree, sold in India as dalchini and in many shops simply as cinnamon. The pack itself notes that cassia is stronger than Ceylon cinnamon, with a warm, sweet and slightly peppery aroma that suits long cooking. It is the bark that goes into the oil at the start of a biryani, pulao or meat curry, and into Chinese braises and five spice. Find more whole bark and sticks in our Cinnamon range.

      How to use it

Break off a piece about the length of a finger and fry it in hot ghee or oil with cloves, cardamom and bay leaf until it unfurls and smells sweet, then add onions or rice. Leave it in a slow cooked korma, nihari or chicken curry and lift it out before serving, as the bark stays woody. Simmer a piece in masala chai, mulled drinks or poaching syrup for fruit. Roast and grind small pieces into garam masala for a fresher blend.
