Enrich Roasted Curry Powder is a Sri Lankan curry powder made the island way, with the whole spices roasted dark before grinding. Coriander, cumin, fennel and fenugreek lead the blend, with black pepper, cinnamon, cardamom, cloves and nutmeg, and the Sri Lankan touches of red rice, curry leaves, pandan leaves and lemon grass. It gives the dark, toasty colour and smoky depth of a Sri Lankan meat curry or black pork curry, and works as well with vegetables and dhal. The 900g jar suits a house that cooks curry most days. How to use it
The label suggests 1 to 2 tablespoons for a curry of meat, vegetables or lentils, depending on taste. Add it after the onions, garlic, ginger and curry leaves have softened in oil, fry for a minute until fragrant, then add the meat or vegetables with coconut milk or water. A pinch stirred in near the end deepens the colour of a finished curry. Always use a dry spoon and close the lid tightly.
