Enrich Red Samba Rice is the red form of Sri Lanka's favourite small grained rice. The short, rounded grains keep their reddish bran, so they cook with more bite and a deeper, nutty taste than white samba, while keeping the soft texture that suits a Sri Lankan curry with plenty of gravy. Many households keep it for weekday rice and curry, and it is good with parippu, a coconut milk curry and pol sambol. How to use it
The pack gives a simple method. Wash the rice 2 to 3 times in cold water, then add 2 to 2½ cups of water to every cup of rice in a medium saucepan or a rice cooker. Bring it to the boil, turn the heat down to its lowest setting and let it simmer for 20 to 25 minutes. Take the pan off the heat and leave the rice to steam for another 12 minutes before serving.
