Enrich Red Raw Rice is a Sri Lankan red rice sold raw, which means it is milled straight from the paddy with no parboiling. The grains are a soft reddish brown and cook to a firm, chewy bite with a gentle nutty taste. It suits a plate of rice and curry, kiribath made red, or a simple red rice congee. How to use it
The pack gives a simple method. Wash the rice 2 to 3 times in cold water, then add 2 to 2½ cups of water to every cup of rice in a medium saucepan or a rice cooker. Bring it to the boil, turn the heat down to its lowest setting and let it simmer for 20 to 25 minutes. Take the pan off the heat and leave the rice to steam for another 12 minutes before serving.
