Enrich Keeri Samba Rice is the tiny, round grained samba that Sri Lankan cooks prize for its fragrance and the way each grain stays separate. Keeri samba is the rice for biryani, yellow rice and the festive spread at a wedding or a New Year table, and plenty of families cook it for everyday rice and curry too. Sold here in a 5kg bag. How to cook it
Wash the rice two or three times in fresh water. Put 1 cup of rice in a saucepan or rice cooker with 2 to 2½ cups of water and bring to the boil, then turn the heat down to its lowest setting and simmer for 20 to 25 minutes. Take the pan off the heat and leave it covered to steam for another 12 minutes before serving. For biryani or yellow rice, fry the washed grains in ghee with spices before adding the water.
